Every month I think about our meals as a balancing game.  I want to serve a variety of dishes but I also want to stay within the budget boundaries we have set.  And I want to keep my family well nourished by serving plenty of protein and fresh vegetables.  I also want try to get a variety of kinds and styles of meat.  Oh and of course my family is really picky about beans 🙁   If that sounds like the epitome of a juggling act you are right.

I can pull it off pretty well now because I’ve been balancing our food like this for a long time.  But in the last year I’ve scaled back on a lot of cuts of beef and leaned into ground beef and more chicken.  When prices rise I have to solve the problem somehow.  I’m awesome but I’m not actually magic!  While scaling back I still want to make meals that feel good to serve and don’t break the bank.

We all know how easy it is to fall into the same dinner rut, especially when the grocery budget is tight or life feels busy. My solution time and again is to spend a little bit of time searching for new recipes.  If I try something new even 2-3 times a month I find a lot of great things over time and it helps to keep our meal rotation from feeling stale.  This practice has also helped me to find things that work with increasing food costs and a decreased food budget.

In this round up I’ve made sure to include a little bit of everything — chicken, beef, turkey, vegetarian options, and even egg-based dinners.  There’s something for every mood, craving, or ingredient you happen to have on hand. Whether you’re looking for a comforting casserole to warm up a chilly evening, a vibrant taco-inspired dish to spice up the week, or a simple fried rice to use up leftovers, this list has you covered.

Mirlandra’s Tip:  If you want to make this low carb don’t use noodles and add an extra pound of meat if you want it extra hearty.  Sometimes I leave the noodles out and make them on the side.  Then my kids can embrace their love of noodles and my 41 year old body can limit the carbs.  (By this I mean I might have a slice of homemade bread instead of noodles! Hehe.)
